University of Muhammadiyah Surabaya UM Surabaya students Dzulhamdi Musa (Islamic Family Law), Amalia Uyun Ayunda (Legal Science), Azizah Nur Awaliyah (Legal Science) were successfully funded and got the opportunity to exhibit at the Indonesian Student Business Competition (KBMI) held by the Ministry of Technology Research and Higher Education on Tuesday (22/11/22)
The innovation created by Musa and his team is a healthy kebab product made from button mushrooms.
“The basic ingredients we use are processed button mushrooms, so they have a texture and taste almost like beef. Button mushrooms themselves have ingredients and benefits for health including reducing the risk of cancer, controlling sugar levels, maintaining heart health, maintaining intestinal health, overcoming free radicals and strengthening bones," he said during an interview.
Musa, as the founder, explained that initially he made kebabs because of his interest in entrepreneurship, plus the 2021 pandemic condition which prompted him to create business innovations that could generate benefits so that they could help the parents' economy.
"Another goal is to improve the welfare of button mushroom farmers by processing button mushrooms which are initially raw into raw materials for kebabs so as to make vegetarian food that has a high taste," he added.
Furthermore, he emphasized that another goal is to improve the welfare of the people in Bratang Wetan by creating jobs.
Musa also said that he prepared carefully for the exhibition. Apart from exhibitions, the team also made live presentations. He explained that the kebab made by his team had advantages compared to other products.
“Button mushrooms that have been processed into meat are a vegetable analogue. Vegetable analog meat itself, is a term for processed food ingredients from plants, button mushrooms have a distinctive taste almost like beef," he added.
Musa, who is the founder of Kebab Kebul, emphasized that even though the kebabs they make contain no meat at all, each 96 gram contains 1 calorie, 3 grams of carbohydrates, 1 gram of fiber, 3 grams of protein, 0 grams of fat, 33% vitamin D, selenium 16%, phosphorus 12% and folate (vitamin B9) 4%.
He said the trend of healthy food and food for diet patterns has become a positive trend that is developing among the public and the demand for it is increasing.
"For that, we are here to present a healthy food product that can be consumed by all circles of society at large," he stressed again.
Not only finished at the exhibition, the kebab product named kebab kebul made by UM Surabaya students can already be enjoyed on various shopping platforms such as Grabfood and Shopeefood, and have even received orders from outside the city.
Meanwhile Junaidi Fery Efendi Head of Student Affairs and Innovation Bureau (BAKAI) appreciated the achievements these students had achieved.
"Alhamdulillah, this is the second year that UM Surabaya has passed the KBMI event, hopefully next year more students will receive funding, hopefully research like this can be an inspiration for other students to excel," he concluded.
